Aloo Tikki

Ingredients:

Potatoes(Medium Size )-6
Green Peas-1/2 Cup 
Oil - 1 Tbsp
Ground Cumin ( Jeera Powder)-1 1/2 Tsp
Finely Chopped Ginger-2 Tsp
Chopped Green Chillies- 2 Tsp
Chopped Coriander Leaves
Red Chilli Powder - 1/2 Tsp
Chaat Masala - 1 Tsp
Garam Masala - 1/4 Tsp
Salt to Taste

Method:

Wash and boil Potatoes and Peas separately in a pressure cooker.

Peel and Mash Potatoes. Add Oil, Mashed Peas, Salt, Jeera, Chopped green chillies, Ginger, Coriander, Red chilli powder, Chaat masala and Garam masala. Mix all the ingredients well.

Make a small balls of the mixture by placing in between your palms, press it to be flatten a bit.

Heat a non-stick pan and drizzle some oil. Now Place the tikki and cook it on medium flame. Once  golden brown, flip it to cook on the other side (add some oil if needed ).

You can cook many patties at a time on the pan depending on the surface area.

Serve Hot with a Sauce or Chutney !!!

Ingredients:

1 1/2 Cups Rice
1/2 Cup Split yellow moong dal
1 Tbsp Ghee
1 Tsp Cumin Seeds
Few Fresh Curry Leaves
1/4 Tsp Whole Black Pepper
Salt to taste
3 1/2 Cups Water

Method:

Wash the Rice & Dal and soak them together in water for 15-20 Mins.

In a Cooking Vessel heat Ghee,add Cumin seeds and let them splutter.Add the Curry leaves and Black pepper corns and fry for few seconds.

Add the drained Rice and Dal to the spices and fry for few seconds.

Add water and salt and pressure cook till the Rice and Dal are cooked and soft...

Baby corn Manchurian

 Ingredients
 Baby Corn-10-12 ( cut each into 2 pieces )
  Maida / All purpose flour- 1 Tbsp
  Corn Flour- 1 Tbsp
  Ginger-Garlic Paste- 1 Tbsp
  Few Tbsp s water
  Salt to Taste

 For Sauce
   Onion- 1 Medium Sized Finely chopped
   Capsicum- 1 ( cut into cubes)
   Spring Onions- few ( finely chopped)
   Garlic Cloves-3-4 Finely chopped
   Green chilies- 2 sliced
   Tomato Sauce-2 Tbsp
   Soya Sauce- 1 Tbsp
   Vinegar- 1 Tbsp
   Chilli Sauce- 1 Tbsp
   Red Chilli Powder- 1 Tsp
    Salt as required
   
 Method

Boil 4 Cups of water with little Salt, wash the baby corn cut into pieces and soak them in the boiling       water  for 15-20 mins.

Mix Maida, Corn flour, Half of Ginger Garlic Paste, Salt in water to make a paste. Dip the boiled and drained Baby corn.

Mix well and make sure that each piece is coated well.

Now Deep fry the Baby corn till they become slightly golden in color.

Once its done, Take a Cooking Vessel add 1 Tbsp of Oil,add chopped Garlic and saute it for few mins.

Add the Green chilies saute it for few seconds. Add the onions and saute it till they become transparent.Add the capsicum and saute it for 2-3 mins.

Add the left over Ginger Garlic Paste and mix well till the raw smell disappears. Now add the chili sauce, Soy sauce,Tomato Sauce, Chili Powder, Vinegar and salt. Add few Tbsp s of water and cook for 2 mins.

Now add the Deep fried Baby corn and combine.Toss on high flame for 1-2 mins..
 ( if  you need gravy add 1 tbsp of corn flour and mix in  little water and add it to the mixture and combine well.)

Garnish with Spring Onions..

 Ingredients:
      Ready-made Pizza Bases -2
        Pizza Cheese Grated - 150gm
        1 Boneless Chicken Breast (150 gm) - cut into 1/4" pieces

 Marinate For 30 Mins:
     1 Tsp Red Chilli Paste
       1/2 Onion & Capsicum - chopped
       1 Tsp Soya Sauce
       1 Tsp Vinegar
       A pinch of Ajinomoto ( optional)
       1/2 Tsp each- Salt & Pepper, 1 Tsp Oregano
       1 Tsp Cornflour, 1 Tbsp Oil, 4 Garlic Flakes Chopped
       1/2 Cup Ready-made Tomato Puree
       3 Tbsp Tomato Ketchup

  Method:
    In a Bowl mix all the ingredients for marination and marinade for 30 mins.

      Mix lil Salt & Red chilli powder in the chicken cover and microwave for 
      3 mins.

      Put the Pizza in the Oven preheated at 250 c and bake it for 8 mins or till 
      the base gets crisp.   

      Spread the Tomato Sauce on the Pizza.

      Put the toppings of the Pizza ( Marinade veggies & chicken) and cover it            
      with the grated Cheese and grill again for 5-6 mins...

Aloo Kurma
Aloo Kurma is a fantastic side dish for chapati, poori or any Indian flat bread. It is also very easy to prepare. It is a versatile dish that goes well even with ghee rice, peas pulao and many other flavored rice as well.

Ingredients:
  4 Potatoes- washed,boiled,peeled & cubed
  1 Large Onion sliced
  2 Green Chilies
  2 Tomatoes quatered 
  Few Curry Leaves
  1 Tbsp Coriander Powder
  1 Tbsp Ginger-Garlic Paste
  Pinch of Turmeric Powder
  1 Tbsp Red Chili Powder
  Coriander Leaves
  1 Tbsp Oil
  2 Tbsp Grated Coconut 
  Salt to Taste

Heat oil in a vessel, add the chopped onions, green chillis and curry leaves and saute for 4-5 mnts or till the onions turn transparent.

Add ginger garlic paste and fry further for another 3 mnts. Add the chilli pwd, turmeric pwd, coriander pwd and salt. Combine well.

Add the quartered tomatoes and boiled and cubed potatoes and cook on medium heat for 6-7 mts. Reduce heat, add the ground coconut and combine. Cook for 3-4 mts.

Add a glass of water, adjust salt and cook covered till you get the desired gravy consistency.

Garnish with fresh coriander leaves and serve with hot rotis, coconut rice or any flavored rice.

Masala Stuffed Okra Fry
  The Recipe calls for stuffing calls for stuffing the okra with a spicy paste of tomatoes, spices and sesame seeds.  Stuffing the okra with this masala heavy paste ensures that the insides get coated with plenty of flavor and, well, no slime.

As for the prep work tip, it’s a bit cumbersome but well worth the time spent.  Wash the okra thoroughly in a colander.  Use a paper towel to dry each piece of okra individually, being sure not to leave any water drops behind.  Spread the okra out on a towel or cutting board while you make the masala paste giving them a chance to air dry even further...

Ingredients:

      30 pieces of okra
      2 medium sized tomatoes, diced
      1 one-inch piece of ginger, peeled and grated
      1 teaspoon cumin powder
      1 teaspoon coriander powder
      1/4 teaspoon red chili powder
      1/4 teaspoon garam masala
      1 teaspoon turmeric
      1-2 teaspoons amchur powder (substitute: lemon juice or tamarind)
      2 tablespoons sesame seeds, ground in a mortar or smashed with the back of a spoon/rolling  pin (or 1tablespoon ground peanuts)
      1 medium sized onion, diced
      Salt to taste


 Wash the okra then dry each okra piece using a paper towel.  Spread out on a cutting board or kitchen towel while making the masala.

  In a wide skillet on medium low heat, heat about a tablespoon of cooking oil.  When hot, add the tomatoes and cook for about 5 minutes until tomatoes are melted down.

 Stir in the masalas and the sesame seeds.  Continue cooking on medium heat, stirring frequently to make sure the masala does not burn, for about 5 minutes or until the water has evaporated.  Remove from heat and allow to cool.

 While the masala paste cools, cut the heads and tails off of the okra.  Carefully cut a vertical slit in the okra starting from the stem side and cutting towards the pointed end.  Stuffing the okra will be easier if you cut all the way on the stem side rather than just creating a slit.

 Using your fingers, pinch off a dime sized portion of the masala paste with your right hand.  Use your left hand to gently pry open the slit and your right hand to spread the paste inside the okra.  It doesn't have to be beautiful – some of the masala will (and should) spill out when the okra goes back in the pan.  Repeat until you have rows of masala stuffed okra.

 Using the same wide skillet, heat about another tablespoon of oil.  When hot, add the onions and saute on medium heat until translucent without letting them brown/burn.

 Add the okra in a single layer in the skillet and gently mix in with the onions.  Cover and cook for about 15-20 minutes on medium low heat, stirring occasionally (gently so as to not break up the okra too much).

Sprinkle with salt to taste.

Uncover and continue cooking for about 5 minutes.

Ingredients

    2 Medium Sized Onions
    1/2 Cup All Purpose Flour
    1/2 Cup Corn Flour
    1 Egg
    1 Tbsp Chilli Powder
    Salt to Taste
    Oil For Frying
    Water


Peel and cut the onions into roundels, Remove the onion rings from the roundels.

Take a Bowl, mix the flours,chilli powder,Egg and salt...

Add little water to make a smooth and thick batter..

Heat the Oil in a deep frying pan.

Once the oil is hot, dip the onion rings in the batter one by one and immediately place it in the hot oil..

Fry the rings till they attain a light golden color

Remove the rings on an absorbent paper and serve hot..

Onion rings are best relished sprinkled with some chaat masala....
